4 cod fillets (about 6 ounces each)
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil, plus more for drizzling
4 thin lemon slices
2 cloves garlic, minced
1 teaspoon dried or 1 tablespoon fresh chopped parsley
1 teaspoon dried or 1 tablespoon fresh chopped thyme
1/2 teaspoon red pepper flakes (optional, for heat)
4 tablespoons unsalted butter, melted
2 tablespoons freshly squeezed lemon juice
Additional lemon wedges for serving

Instructions:

Preheat your oven to 400ยฐF (200ยฐC). Lightly oil a baking dish or line it with parchment paper for easy cleanup.

Pat the cod fillets dry with paper towels and season them on both sides with salt and pepper.
