1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
1 tablespoon dried culinary lavender

For the Blackberry Frosting:

1/2 cup unsalted butter, softened
2 cups confectioners’ sugar
1/2 teaspoon vanilla extract
2 tablespoons blackberry puree (made by blending fresh or thawed frozen blackberries)

For Decoration:

Fresh blackberries, for garnish

Directions:

For the Cupcakes:

Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners and set aside.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Beat in the eggs, one at a time, followed by the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.

Fold in the dried culinary lavender until evenly distributed throughout the batter.

Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cupcakes from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

For the Blackberry Frosting:

In a large mixing bowl, beat the softened butter until creamy.

Gradually add the confectioners’ sugar, beating until smooth and fluffy.

Mix in the vanilla extract and blackberry puree until well combined. Adjust the consistency by adding more confectioners’ sugar if needed.

For Assembly:

Once the cupcakes have cooled completely, frost each cupcake with the blackberry frosting using a piping bag or offset spatula.

Place a fresh blackberry on top of each cupcake as a garnish.

Serve and enjoy these delicious Lavender Blackberry Cupcakes with their beautiful blackberry frosting!

These cupcakes are perfect for any occasion and are sure to impress with their delightful flavor and elegant appearance.
