Brie, Cranberry, and Pomegranate Grilled Cheese

Ingredients:

8 slices of your favorite artisan bread (such as sourdough or multigrain)
200g Brie cheese, sliced
1 cup fresh cranberries
1/2 cup pomegranate seeds
1/2 cup water
1/2 cup granulated sugar
1 tablespoon orange zest
2 teaspoons balsamic vinegar
Butter for spreading

Instructions:

Make the Cranberry Pomegranate Sauce:

In a saucepan over medium heat, combine the cranberries, water, sugar, orange zest, and balsamic vinegar. Stir until the sugar dissolves.
Bring to a simmer and cook until the cranberries burst and the sauce thickens, about 10-15 minutes. Remove from heat and let cool slightly.
Stir in the pomegranate seeds and set aside.

Assemble the Sandwich:
