Ingredients:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
3 (8-ounce) packages cream cheese, softened
1 cup white chocolate chips, melted
3/4 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup raspberry jam
Fresh raspberries for garnish

Instructions:

Preheat your oven to 325ยฐF (165ยฐC). Grease a 9-inch springform pan.
In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of the prepared springform pan.
In a large bowl, beat cream cheese until smooth. Add melted white chocolate and beat until well combined.
Gradually add 3/4 cup sugar, beating until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Pour the cream cheese mixture over the prepared crust in the springform pan.
Bake in preheated oven for 45-50 minutes, or until the center is almost set. Remove from the oven and let it cool completely.
Once cooled, spread raspberry jam evenly over the top of the cheesecake.
Refrigerate for at least 4 hours or overnight.
Before serving, garnish the top of the cheesecake with fresh raspberries.
