Crust Ingredients:
1 1/2 cups of finely ground graham crackers
1/4 cup of granulated sugar
1/2 cup of melted butter
Filling Ingredients:
4 cups of fresh raspberries, divided
1 cup of granulated sugar, or to your preference
1 tablespoon of freshly squeezed lemon juice
32 ounces of softened cream cheese
1/2 cup of sour cream
4 large eggs
2 teaspoons of vanilla extract
Garnish:
Additional fresh raspberries
A few sprigs of mint
Directions:
Crust Setup: Combine the graham cracker crumbs with sugar and melted butter until well blended. Firmly press the mixture into the bottom of a springform pan. Bake at 350°F (175°C) for 10 minutes, then allow to cool.
Raspberry Preparation: Take 2 cups of raspberries, sugar, and lemon juice and blend until the mixture is pureed. Strain to remove the seeds for a smooth puree.
