When life gives you lemons ๐Ÿ‹, make lemon lava cake! Trust me, it’s ๐Ÿ”ฅ!

Ingredients:

1/2 cup (1 stick) unsalted butter
4 ounces white chocolate, chopped
2 large eggs
2 large egg yolks
1/2 cup granulated sugar
Zest of 1 lemon
2 tablespoons lemon juice
1/4 cup all-purpose flour
Powdered sugar, for dusting

Instructions:

Preheat your oven to 425ยฐF (220ยฐC). Grease four ramekins or small oven-safe dishes with butter or cooking spray.

In a microwave-safe bowl, combine the butter and chopped white chocolate. Microwave in 30-second intervals, stirring between each interval, until the butter and chocolate are melted and smooth. Set aside to cool slightly.

In a separate mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until light and fluffy.
