Ingredients:

2 slices of your favorite bread
1 tablespoon unsalted butter
1 tablespoon olive oil
1 large onion, thinly sliced
A pinch of sugar
A pinch of salt
4-6 slices of brie cheese
A handful of arugula (rocket)
A small handful of walnuts, roughly chopped
Instructions:

Heat 1/2 tablespoon of butter and olive oil in a pan over medium heat. Add the sliced onions, sugar, and salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes.
Butter one side of each slice of bread. On the unbuttered side of one slice, lay down the slices of brie cheese, then top with the caramelized onions, a handful of arugula, and the chopped walnuts.
Place the other slice of bread on top, buttered side up.
In a skillet over medium heat, grill the sandwich for about 3-4 minutes on each side, until the bread is toasted and the cheese has melted.
Serve immediately while warm.
