2 large eggs
1 1/2 cups (360ml) whole milk

1/2 teaspoon vanilla extract (optional, for sweet crêpes)

Instructions:

In a blender, combine the flour, eggs, milk, melted butter, sugar (if making sweet crêpes), salt, and vanilla extract (if using). Blend until the mixture is smooth and bubbles form on top, about 30 seconds. Let the batter rest in the refrigerator for at least 30 minutes or overnight; this helps the flour absorb the liquid and gives a tender crêpe.

Heat a non-stick skillet or crêpe pan over medium heat. Add a small amount of butter to coat the bottom of the pan.

Pour a small ladleful of batter into the center of the pan and swirl the pan to spread the batter thinly. Cook for about 30 seconds, until the edges of the crêpe begin to look dry and lift from the sides of the pan.

Use a spatula to gently flip the crêpe and cook for another 10-15 seconds on the other side.
