Vanilla Cupcakes:

1 ¾ cups all-purpose flour
1 ¼ teaspoons baking powder
¼ teaspoon salt
¾ cup unsalted butter, softened
1 cup granulated sugar
3 large eggs
2 teaspoons pure vanilla extract
½ cup whole milk

Gradient Whipped Cream Frosting:

2 cups heavy whipping cream
½ cup powdered sugar
1 teaspoon vanilla extract
Gel food coloring in your chosen colors

Instructions:

Preheat Oven & Prepare Pan:
Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.

Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Cream Butter & Sugar:
In a large bowl, use an electric mixer to cream the butter and sugar together until light and fluffy, about 2-3 minutes.

Add Eggs & Vanilla:
Beat in the eggs one at a time, then stir in the vanilla extract.

Combine with Dry Ingredients:
Add the dry ingredients in three parts, alternating with the milk. Begin and end with the dry ingredients and mix just until the batter is smooth.

Fill Cupcake Liners:
Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake:
Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Cool Cupcakes:
Remove from the oven and let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Make Frosting:
While cupcakes are cooling, make the frosting. In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract with an electric mixer on high speed until stiff peaks form.

Divide for Colors:
Divide the whipped cream among different bowls for however many colors you want to use.

Color Frosting:
Add a different gel food coloring to each bowl and gently fold to create the shades you want.

Prepare Piping Bag:
Place a star tip in a piping bag. Carefully spoon each color of frosting into the bag, side by side. Twist the top of the bag to secure the frosting inside.

Frost Cupcakes:
Pipe the frosting onto the cupcakes in a circular motion starting at the outer edge and working toward the center to create a swirl.

Decorate:
Immediately add sprinkles on top of the frosting.

Serve:
Serve the cupcakes once the frosting is applied, or chill them in the refrigerator if serving later.
