These crepes are oozing with homemade blackberry sauce that will have you reaching for one after another. ๐Ÿฅž๐Ÿ’œ Sweet, tart, and absolutely irresistible! ๐Ÿคค

Blackberry Sauce:

Ingredients:

2 cups fresh blackberries
1/4 cup sugar (adjust to taste)
1 tablespoon lemon juice
2 teaspoons cornstarch dissolved in 2 tablespoons of water

Instructions:

In a saucepan over medium heat, combine the blackberries, sugar, and lemon juice. Stir gently until the sugar dissolves.
Reduce heat and simmer for about 5 minutes until the berries start to release their juices.
Add the dissolved cornstarch to the berry mixture and stir well.
Cook until the sauce thickens to a desired consistency, about 5 more minutes. Once thickened, remove from heat and set aside to cool slightly. It will continue to thicken as it cools.

Ingredients:

1 cup all-purpose flour
1 1/2 cups milk
2 large eggs
1 tablespoon sugar
2 tablespoons melted butter, plus extra for cooking
1/4 teaspoon salt
1 teaspoon vanilla extract (optional)

Instructions:

In a blender, combine flour, milk, eggs, sugar, melted butter, salt, and vanilla extract. Blend until the mixture is smooth and bubbles form on top, about 30 seconds. Let the batter sit for a few minutes to allow the bubbles to settle.
Heat a non-stick skillet or crepe pan over medium heat. Add a small amount of butter to coat the bottom of the pan.
