Lemon Lava Cake

Ingredients:

1/2 cup (1 stick) unsalted butter
4 ounces white chocolate, chopped
2 large eggs
2 large egg yolks
1/2 cup granulated sugar
Zest of 1 lemon
2 tablespoons lemon juice
1/4 cup all-purpose flour
Powdered sugar, for dusting

Instructions:

Preheat your oven to 425ยฐF (220ยฐC). Grease four ramekins or small oven-safe dishes with butter or cooking spray.

In a microwave-safe bowl, combine the butter and chopped white chocolate. Microwave in 30-second intervals, stirring between each interval, until the butter and chocolate are melted and smooth. Set aside to cool slightly.

In a separate mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until light and fluffy.

Remove the lava cakes from the oven and let them cool in the ramekins for a few minutes. Then, carefully invert each cake onto a serving plate.

Dust the tops of the cakes with powdered sugar for garnish, if desired.
