Ingredients:

1 lb ground beef
1 onion, diced
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
1 can (14.5 oz) diced tomatoes
4 cups beef broth
1 teaspoon Italian seasoning
Salt and pepper to taste
1 package (9 oz) cheese tortellini
Fresh parsley, chopped for garnish
Fresh basil for garnish
Grated Parmesan cheese for serving

Instructions:

Brown the Ground Beef:

In a large pot over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess fat if necessary.

SautΓ© the Vegetables:

Add the diced onion, carrot, and celery to the pot with the ground beef. Cook until the vegetables are softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Add Tomatoes and Broth:

Stir in the diced tomatoes (with their juice), beef broth, and Italian seasoning. Season with salt and pepper to taste. Bring the mixture to a boil.

Simmer the Soup:

Reduce the heat to low and let the soup simmer for about 15-20 minutes, or until the vegetables are tender.

Cook the Tortellini:

Increase the heat to return the soup to a gentle boil. Add the cheese tortellini and cook according to the package instructions, usually about 5-7 minutes, until they are tender and float to the surface.

Garnish and Serve:

Taste the soup and adjust the seasoning if needed. Serve the soup hot, garnished with chopped fresh parsley, basil leaves, and a sprinkle of grated Parmesan cheese.
