1 cup (125g) all-purpose flour
2 large eggs
1 1/2 cups (360ml) whole milk
1 tablespoon (15g) melted unsalted butter, plus extra for cooking
1 tablespoon (12g) granulated sugar (for sweet crêpes)
A pinch of salt
1/2 teaspoon vanilla extract (optional, for sweet crêpes)

Instructions:

In a blender, combine the flour, eggs, milk, melted butter, sugar (if making sweet crêpes), salt, and vanilla extract (if using). Blend until the mixture is smooth and bubbles form on top, about 30 seconds. Let the batter rest in the refrigerator for at least 30 minutes or overnight; this helps the flour absorb the liquid and gives a tender crêpe.

Heat a non-stick skillet or crêpe pan over medium heat. Add a small amount of butter to coat the bottom of the pan.
