Cod in a Lemon Butter Tomato Sauce

Great sauce, tangy citrus, and sweet cherry tomatoes combo that’ll have you fishing for seconds.

Ingredients:

4 cod fillets
Salt and pepper, to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
1/2 cup cherry tomatoes, halved
2 cloves garlic, minced
1/2 cup heavy cream
Juice of 1 lemon
1 teaspoon lemon zest
1/2 teaspoon red pepper flakes (optional)
Fresh parsley, chopped for garnish

Instructions:

Prep the Cod:

Season the cod fillets with salt and pepper.

Cook the Cod:

In a large skillet, heat the olive oil over medium-high heat. Add the cod fillets and cook until golden on both sides and cooked through, about 3-4 minutes per side.
Remove the cod from the skillet and set aside.

Make the Sauce:

In the same skillet, reduce the heat to medium and melt the butter.
Add the garlic and sautรฉ until fragrant, about 1 minute.
Stir in the heavy cream, lemon juice, and lemon zest, and let simmer until the sauce starts to thicken.
Add the cherry tomatoes and red pepper flakes (if using), and cook for an additional minute.
