Ingredients:
For the Meringues:
4 large egg whites, at room temperature
1 cup (200g) granulated sugar
1 pinch of cream of tartar or 1/2 teaspoon white vinegar (to stabilize the whites)
1 teaspoon vanilla extract
For the Blackberry Cream:
1 cup (240ml) heavy whipping cream
1/4 cup (50g) granulated sugar (adjust to taste)
1/2 cup blackberry puree (from about 1 cup of fresh blackberries blended and strained)
Purple food coloring (optional, if desired for more vibrant color)
For Garnish:
Fresh blackberries
Instructions:
Preheat the Oven: Preheat your oven to 200ยฐF (95ยฐC). Line a baking sheet with parchment paper.

Make the Meringue: In a clean, dry bowl, beat the egg whites on medium speed until foamy. Add the cream of tartar or vinegar, and continue to beat, gradually adding the granulated sugar a little at a time, until the meringue holds stiff peaks and the sugar is fully dissolved (you can test this by rubbing a bit of meringue between your fingers to ensure it’s smooth). Beat in the vanilla extract.

Bake the Meringues: Spoon or pipe the meringue into small circles on the prepared baking sheet. Place in the oven and bake for 1.5 to 2 hours, or until the meringues are dry and easily peel away from the parchment paper. Turn off the oven and let them cool completely inside (this helps prevent cracking).

Make the Blackberry Cream: In a mixing bowl, beat the heavy whipping cream with the sugar until it begins to thicken. Add the blackberry puree and continue to beat until it forms firm peaks. If you want a more vivid color, add a little purple food coloring and mix until well combined.

Assemble the Dessert: Once the meringues are cool, spoon or pipe the blackberry cream on top of each meringue. Top each with a fresh blackberry.

Serve: These desserts are best served soon after assembly as the meringue will start to soften once it comes into contact with the cream.
