Ingredients:
For the Meringues:
4 large egg whites, at room temperature
1 cup (200g) granulated sugar
1 pinch of cream of tartar or 1/2 teaspoon white vinegar (to stabilize the whites)
1 teaspoon vanilla extract
For the Blackberry Cream:
1 cup (240ml) heavy whipping cream
1/4 cup (50g) granulated sugar (adjust to taste)
1/2 cup blackberry puree (from about 1 cup of fresh blackberries blended and strained)
Purple food coloring (optional, if desired for more vibrant color)
For Garnish:
Fresh blackberries
Instructions:
Preheat the Oven: Preheat your oven to 200ยฐF (95ยฐC). Line a baking sheet with parchment paper.

Make the Meringue: In a clean, dry bowl, beat the egg whites on medium speed until foamy. Add the cream of tartar or vinegar, and continue to beat, gradually adding the granulated sugar a little at a time, until the meringue holds stiff peaks and the sugar is fully dissolved (you can test this by rubbing a bit of meringue between your fingers to ensure it’s smooth). Beat in the vanilla extract.

Bake the Meringues: Spoon or pipe the meringue into small circles on the prepared baking sheet.
