Blackberry Sauce:
Ingredients:
2 cups fresh blackberries
1/4 cup sugar (adjust to taste)
1 tablespoon lemon juice
2 teaspoons cornstarch dissolved in 2 tablespoons of water
Instructions:
In a saucepan over medium heat, combine the blackberries, sugar, and lemon juice. Stir gently until the sugar dissolves.
Reduce heat and simmer for about 5 minutes until the berries start to release their juices.
Add the dissolved cornstarch to the berry mixture and stir well.
Cook until the sauce thickens to a desired consistency, about 5 more minutes. Once thickened, remove from heat and set aside to cool slightly. It will continue to thicken as it cools.
Crepes:
Ingredients:
1 cup all-purpose flour
1 1/2 cups milk
2 large eggs
1 tablespoon sugar
2 tablespoons melted butter, plus extra for cooking
1/4 teaspoon salt
1 teaspoon vanilla extract (optional)
Instructions:
In a blender, combine flour, milk, eggs, sugar, melted butter, salt, and vanilla extract. Blend until the mixture is smooth and bubbles form on top, about 30 seconds. Let the batter sit for a few minutes to allow the bubbles to settle.
Heat a non-stick skillet or crepe pan over medium heat. Add a small amount of butter to coat the bottom of the pan.
Pour a small amount of batter into the center of the pan and swirl to spread evenly.
Cook for 30 to 60 seconds until the edges lift from the pan and the bottom is lightly golden. Use a spatula to gently flip the crepe and cook the other side for an additional 20 to 30 seconds.
Transfer the cooked crepe to a plate and cover with a towel to keep warm.
Repeat with the remaining batter, adding butter to the pan as needed.
